One product, two different recipes

I have been recently challenged to cook two completely different recipes with one main product.

The first recipe is a main and the second would be something that I would pack for my husbands lunch, for work.

I have used  Moy Park- Chicken Meatballs  for both recipes,which I purchase from Ocado, my favourite online store. That's where I do most of my weekly shopping, so every ingredient seen in this post is from Ocado. 

The first recipe that I wanted to cook was the creamy wild mushroom stew with chicken meatballs, a favourite of mine and the second recipe is a very yummy Sandwich. 

For both recipes I've rolled the Chicken Meatballs in bread crumbs and put them in the oven. Why? Very simple. The meatballs get less oily and they have a crunchy crust which I love.

Wild Mushroom Stew with Chicken Meatballs 


Ingredients:

1/2 pack of Moy Park- Chicken Meatballs

50g breadcrumbs

50g butter

Wild Pied de mouton Mushrooms 90g

Wild Black Trompette Mushrooms 90g

Wild Girolle Mushrooms 80g

Mixed Wild Musrooms 100g

20g parsley

2 pieces garlic

200g Organic Soured Cream

salt&pepper







Method

As I've mentioned before, I've rolled the meatballs in breadcrumbs and placed them on a tray, in the oven for 20-25 mins at 180 degrees.

After that, I washed the mushrooms several times in water because they are wild mushrooms, so I wanted to take off any trace of soil.
I cut the mushrooms and placed them in a pan, together with the butter, diced garlic and a bit of salt and I stired them for 5-10 minutes, until they started shrinking.
I left them to rest for a few minutes and added the soured cream and chopped parsley on top and seasoned with salt & pepper.

I added the cooked meatballs and Voila! :)






The next day I wanted to try a different recipe with the chicken meatballs left, so because I was rushing I wanted to make something simple and quick.

Meatball Sandwich

Ingredients:

1/2 pack of cooked Moy Park Meatballs in breadcrumbs

1 Burger Bun

50g Coleslaw

50g Brie Cheese


Method

I cut the bun in two halves, on the base I added the Brie Cheese, on top the meatballs and over them a few spoons of Coleslaw. Simple and delicious! :)
